Enchiladas del Pueblo – potato, tomato, and onion stuffed corn tortillas covered in cheese, with rice, unnecessary green stuff, and a side of the best mole sauce I’ve ever tasted.
We eat out so rarely, it feels very special when we do. There’s just somethin’ irresistible about Mexican food… and look, no beans! I didn’t know it was possible to get a vegetarian special without “thunder berries”. 😁
